Apple Tabbouleh
Ingredients

cup uncooked bulgur
2
cups boiling water
2
cups diced red Michigan Apples
3
tablespoons lemon juice
1/4
cup chopped mint
1/4
cup chopped parsley
3
tablespoons sliced green onion
1
tablespoon vegetable oil (optional)

teaspoon salt
1.
Place bulgur in small bowl. Pour water over bulgur and let stand 30 minutes. Drain and press out excess water.

In large bowl, toss Michigan Apples with lemon juice. Add bulgur and remaining ingredients. Cover and chill about 4 hours.
Suggested Michigan Apple varieties to use
Empire, Gala, Ida Red, Jonagold, Jonathan, McIntosh, Red Delicious or Rome.
