Cheesy Lamburger

Ingredients

cup (1 ounce) shredded Cheddar cheese
|

tablespoons sweet pickle relish
|
|
2

tablespoons finely chopped onion
|
|

|
tablespoon finely chopped green bell pepper
|
|
1
|
teaspoon Dijon mustard
|
|
1
|
pound lean ground American lamb
|
|
4
|
multi-grain hamburger buns, toasted
|

4
|
lettuce leaves
|
|
4
|
slices tomato
|
|

|
Prepare grill. Combine cheese, relish, onion, bell pepper and mustard in small bowl. Shape lamb into 8 thin patties about 4 inches in diameter. Spoon cheese mixture onto centers of 4 patties. Top each with another patty, pressing edges to seal filling inside. Place burgers on grid. Grill 4 inches over medium coals 5 minutes on each side or to desired doneness. Serve on buns with lettuce and tomato.

Variation
Substitute dill pickle relish and Monterey Jack or Swiss cheese for the sweet relish and Cheddar.
