Makes 4 servings
Ingredients
1-1/2 pounds Idaho potatoes, peeled and cut into 1-inch chunks
1/4 cup mayonnaise
1/4 cup sour cream
2 green onions, sliced
1 carrot, peeled and grated
4 teaspoons TABASCO® brand Green Jalapeño Pepper Sauce
1 teaspoon salt
  Lettuce leaves
  Tomato wedges
   
Place potatoes and enough water to cover in 4-quart saucepan. Heat to boiling over high heat. Cover, reduce heat and simmer 15 minutes or until potatoes are tender; drain. Coarsely mash potatoes in large bowl. Stir in mayonnaise, sour cream, green onions, carrot, TABASCO® Green Sauce and salt.
To serve, line plate with lettuce leaves; top with potato salad. Garnish with tomato wedges.
