Garlic 'n Lemon Roast Chicken

Ingredients

small onion, finely chopped
|
|

envelope LIPTON® RECIPE SECRETS® Savory Herb with Garlic Soup Mix
|
|

|
tablespoons BERTOLLI® Olive Oil
|
|
2
|
tablespoons lemon juice
|
|
1
|
(3-1/2-pound) roasting chicken
|
|
|
|
|
|
|
|
|
|
1. In large plastic bag or bowl, combine onion and soup mix blended with oil and lemon juice; add chicken. Close bag and shake, or toss in bowl, until chicken is evenly coated. Cover and marinate in refrigerator, turning occasionally, 2 hours.
|

2. Preheat oven to 350°F. Place chicken and marinade in 13×9-inch baking or roasting pan. Arrange chicken, breast side up; discard bag.
|
|
3. Bake uncovered, basting occasionally, 1 hour and 20 minutes or until meat thermometer reaches 180°F. (Insert meat thermometer into thickest part of thigh between breast and thigh; make sure tip does not touch bone.)
