Penne with Creamy Tomato Sauce


Ingredients
1 tablespoon olive or vegetable oil
1/2 cup diced onion
2 tablespoons dry vermouth, white wine or chicken broth
1 can (14.5 ounces) CONTADINA® Recipe Ready Diced Tomatoes with Italian Herbs, undrained
1/2 cup heavy whipping cream
8 ounces dry penne or rigatoni, cooked, drained, kept warm
1 cup pitted ripe olives, drained, sliced
1/2 cup (2 ounces) grated Parmesan cheese
1/4 cup sliced green onions
   
1. Heat oil in large skillet. Add diced onion; sauté 2 to 3 minutes or until onion is tender.
2. Add vermouth; cook 1 minute.
3. Stir in undrained tomatoes, cream, pasta, olives and Parmesan cheese; heat thoroughly, stirring occasionally. Sprinkle with green onions.
