Penne with Creamy Tomato Sauce

Ingredients

tablespoon olive or vegetable oil
|
|
1/2
|
cup diced onion
|
|
2
|
tablespoons dry vermouth, white wine or chicken broth
|
|
1
|
can (14.5 ounces) CONTADINA® Recipe Ready Diced Tomatoes with Italian Herbs, undrained
|
|
1/2
|
cup heavy whipping cream
|
|
8
|
ounces dry penne or rigatoni, cooked, drained, kept warm
|
|
1
|
cup pitted ripe olives, drained, sliced
|
|
1/2
|
cup (2 ounces) grated Parmesan cheese
|
|
1/4
|
cup sliced green onions
|
|
|
|
|
|
|
|
|
|
1. Heat oil in large skillet. Add diced onion; sauté 2 to 3 minutes or until onion is tender.
|
|
2. Add vermouth; cook 1 minute.
|
|
3. Stir in undrained tomatoes, cream, pasta, olives and Parmesan cheese; heat thoroughly, stirring occasionally. Sprinkle with green onions.
