Southwest Meat Loaf


Ingredients
1 envelope LIPTON® RECIPE SECRETS® Onion Soup Mix*
2 pounds ground beef
2 cups (about 3 ounces) cornflakes or bran flakes cereal, crushed
1-1/2 cups frozen or drained canned whole kernel corn
1 small green bell pepper, chopped
2 eggs
3/4 cup water
1/3 cup ketchup
*Also terrific with LIPTON® RECIPE SECRETS® Onion Mushroom or Beefy Onion Soup Mix.
   
1. Preheat oven to 350°F. In large bowl, combine all ingredients.
2. In 13×9-inch baking or roasting pan, shape into loaf.
3. Bake uncovered 1 hour or until done. Let stand 10 minutes before serving. Serve, if desired, with salsa.
 
Recipe Tip   For a great lunchbox treat, wrap leftover meat loaf slices in a tortilla and top with your favorite taco toppings such as salsa, sour cream, grated cheese and shredded lettuce.
