Glazed Fruit Kabobs

Fresh pineapple is not only tasty but nutritionally beneficial as well. It contains an enzyme that aids in digestion and is good for arteries and skin.

Ingredients

fresh California nectarines, halved, pitted and cut into 6 wedges
|
|

fresh California plums, halved, pitted and quartered
|
|
1/2

fresh pineapple, peeled and cut into 2-inch cubes
|
|
1/4
|
cup packed brown sugar
|
|
2

tablespoons water
|
|
1-1/2
|
teaspoons cornstarch
|
|
3/4
|
teaspoon rum extract
|
|
|

|
|
Alternately thread fruit onto skewers. Combine sugar, water, cornstarch and rum extract in small saucepan. Bring to a boil, stirring constantly, until thickened and clear. Place fruit kabobs in shallow pan. Brush with glaze mixture. (This may be done ahead.) Grill kabobs about 4 to 5 inches from heat 6 to 8 minutes or until hot, turning once, brushing occasionally with glaze.
