1. In large heavy saucepan over medium-low heat, melt chocolate with EAGLE BRAND®; stir in vanilla. Pour into large bowl; cool to room temperature, about 1-1/2 hours.
2. Beat chocolate mixture until smooth. Fold in whipped cream. Spoon into 8 to 10 individual dessert dishes. Chill.
3. In small saucepan, combine water, jam, confectioners' sugar and cornstarch. Cook and stir until thickened and clear. Cool. Stir in raspberries.
4. Top each serving with raspberry topping and serve. Store leftovers covered in refrigerator.
