Shrimp Remoulade Subs

Ingredients

pound small or medium shrimp, peeled and deveined
|
|
1/4
|
cup finely chopped celery
|
|
1/4
|
cup finely chopped green onions
|
|
1/4
|
cup country-style mustard
|
|
1
|
tablespoon chopped fresh parsley
|
|
1
|
tablespoon olive oil
|
|
1
|
tablespoon cider vinegar
|
|

|
teaspoons Original TABASCO® brand Pepper Sauce
|
|
4
|
(6-inch) French rolls
|
|
|
Red leaf lettuce
|
|
1
|
ounce Brie cheese, thinly sliced
|
|
|
|
|
|
|
|
|
|
Place shrimp in 2-quart saucepan with enough water to cover. Heat to boiling over high heat; boil 2 minutes or until shrimp turn pink. Drain well; set aside to cool. Combine celery, green onions, mustard, parsley, oil, vinegar and TABASCO® Sauce in medium bowl. Add shrimp; mix well.

To serve, cut rolls crosswise in half. Arrange lettuce on bottom halves of rolls; top with shrimp remoulade mixture, Brie slices and remaining roll halves.
