Sweet and Sour Chicken Nuggets

Ingredients

(1-cup) bags UNCLE BEN'S® Boil-In-Bag Rice
|
|
1
|
package (10 ounces) frozen chicken nuggets or chicken chunks
|
|
1
|
tablespoon oil
|
|
2
|
large green bell peppers, cut into 1-inch squares
|
|
2
|
large carrots, diagonally cut into thin slices
|
|
1-1/2
|
teaspoons minced garlic
|
|
2
|
cans (8 ounces each) pineapple chunks in juice, drained and 1/2 cup juice reserved
|
|
1
|
jar (10 ounces) sweet and sour sauce
|
|
|
|
|
|
|

1. Cook rice according to package directions.
|
|
2. Prepare chicken nuggets according to package directions for conventional oven.
|
|
3. Heat oil in large skillet over medium-high heat until hot. Add bell peppers, carrots and garlic; cook and stir 4 minutes. Add reserved pineapple juice. Cover; reduce heat and simmer 10 to 12 minutes until vegetables are almost tender. Add pineapple chunks; cover and cook 2 minutes. Stir in sweet and sour sauce; cover and cook 2 more minutes or until hot.

4. Place warm chicken nuggets on a bed of rice and top with vegetable mixture.
