Makes 4 servings
Ingredients
2 tablespoons butter or margarine
1 small onion, chopped
3/4 teaspoon Italian herb seasoning, crushed
1 package (10 ounces) frozen mixed vegetables
1 box UNCLE BEN'S® COUNTRY INN® Three Cheese Rice
1 cup water
1 cup milk
3/4 cup (3 ounces) shredded pizza cheese blend
   
1. Melt butter in large skillet over medium-high heat. Add onion and herb seasoning. Cook 3 minutes or until onion is soft.
2. Add vegetables and rice, reserving seasoning packet; cook 2 minutes. Add water, milk and contents of seasoning packet. Bring to a boil. Cover; reduce heat and simmer 10 minutes, stirring occasionally. Remove from heat.
3. Let stand, covered, 5 minutes. Stir in cheese.
 
Cook's Tip   This meatless dish can be served as an accompaniment to baked or grilled chicken.
