Clam and White Bean Chowder

Ingredients

tablespoons vegetable oil
|

large carrot, peeled and diced
|
|

medium onion, diced
|
|

(6-1/2-ounce) cans clams, undrained
|
|

(20-ounce) can white kidney beans, drained and rinsed
|
|
1

(8-ounce) bottle clam juice
|
|
1

cup half-and-half
|
|

teaspoons Original TABASCO® brand Pepper Sauce
|
|
1/4
|
cup chopped fresh parsley
|
|
|
|
|
|
|
|
|
|
Heat oil in 4-quart saucepan over medium heat. Add carrot and onion; cook about 5 minutes, stirring occasionally.
|
|
Add clams with liquid, beans, clam juice, half-and-half and TABASCO® Sauce; heat to boiling over high heat. Reduce heat to low; cover and simmer 10 minutes to blend flavors, stirring occasionally. Just before serving, stir in parsley.
