Spinach Pie

Ingredients

tablespoon FILIPPO BERIO® Olive Oil
|

1
|
pound fresh spinach, washed, drained and stems removed
|
|
1
|
medium potato, cooked and mashed
|
|
2
|
eggs, beaten
|
|
1/4
|
cup cottage cheese
|
|
2
|
tablespoons grated Romano cheese
|
|
|
Salt
|
|
|
|
|
|
|
|
|
|
Preheat oven to 350°F. Grease 8-inch round cake pan with olive oil. Tear spinach into bite-size pieces. In large bowl, combine spinach, potato, eggs, cottage cheese and Romano cheese. Spoon mixture into prepared pan. Bake 15 to 20 minutes or until set. Season to taste with salt.
