Quick Mediterranean Fish
Ingredients

medium onion, sliced

tablespoons olive oil
1
clove garlic, crushed
1
can (14-1/2 ounces) DEL MONTE® Stewed Tomatoes - Italian Recipe
3
to 4 tablespoons medium salsa
1/4
teaspoon ground cinnamon
1-1/2
pounds firm fish (such as halibut, red snapper or sea bass)
12
stuffed green olives, halved crosswise

7 minutes
Microwave Directions
1.
Combine onion, oil and garlic in 1-1/2-quart microwavable dish. Cover and microwave on HIGH 3 minutes; drain.
2.
Stir in tomatoes, salsa and cinnamon. Top with fish and olives.
3.
Cover and microwave on HIGH 3 to 4 minutes or until fish flakes easily with fork. Garnish with chopped parsley, if desired.
