Fish Biters


Ingredients
24 giant goldfish-shaped crackers
12 slices pepperoni, halved
12 Monterey Jack cheese cubes, halved
24 small black olive slices
24 flat leaf parsley leaves
   
1. Preheat oven to 425°F.
2. Coat baking sheet with nonstick cooking spray.
3. Place crackers on prepared baking sheet. Place 2 pepperoni halves on tail ends. Place cheese half in center of each fish.
4. Bake 3 minutes or until cheese is melted. Remove from oven and immediately top with olive slice to resemble eye.
5. Lift up olive slice slightly and place a parsley leaf behind it to resemble fin. Gently press down on olive to adhere. Serve warm.
 
Tip   Fish may be assembled up to 2 hours in advance. Complete steps 1, 2 and 3 then cover with a sheet of plastic wrap or foil and refrigerate until ready to bake.
