Calypso Salad

Ingredients

1/3

cup plain nonfat yogurt
|

tablespoons fat-free mayonnaise
|
|

teaspoon ground ginger
|
|

Lettuce leaves
|
|

medium oranges, peeled and cut into wedges
|
|

ounces fresh asparagus, cooked and cut into 1-inch pieces
|

small red onion, sliced
|
|

cups chopped cooked chicken or beef
|
|
1/4

cup sliced almonds, toasted
|
|

|
|
Prepare rice according to package directions.
|
|
Combine yogurt, mayonnaise and ginger in small bowl; mix well. Set aside.
|
|
Place lettuce on serving platter; top with rice. Alternately arrange orange wedges and asparagus pieces over rice; top with onion rings and chicken. Drizzle with yogurt mixture; sprinkle with almonds.
