Maple Spam™ Stuffed Squash

Ingredients

small acorn squash (about 1 pound each), cut in half, seeds removed
|
|
1/2
|
cup chopped celery
|
|
1/4
|
cup chopped onion
|
|
2

tablespoons butter or margarine
|
|
1

(12-ounce) can SPAM® Classic, chopped
|

1-1/2

cups frozen cubed hash brown potatoes, thawed
|
|
1/2
|
cup chopped apple
|
|
1/4
|
cup pure maple syrup or maple-flavored syrup
|
|
|

|
Heat oven to 375°F. Place squash, cut side up, in 13×9-inch baking pan. In large skillet over medium-high heat, sauté celery and onion in butter until tender. Stir in SPAM® and potatoes. Cook, stirring occasionally, until potatoes are lightly browned. Stir in apple and syrup. Spoon 1/2 cup SPAM™ mixture into each squash half. Cover. Bake 40 to 50 minutes or until squash is tender.
