Maple Spam™ Stuffed Squash


Ingredients
3 small acorn squash (about 1 pound each), cut in half, seeds removed
1/2 cup chopped celery
1/4 cup chopped onion
2 tablespoons butter or margarine
1 (12-ounce) can SPAM® Classic, chopped
1-1/2 cups frozen cubed hash brown potatoes, thawed
1/2 cup chopped apple
1/4 cup pure maple syrup or maple-flavored syrup
   
Heat oven to 375°F. Place squash, cut side up, in 13×9-inch baking pan. In large skillet over medium-high heat, sauté celery and onion in butter until tender. Stir in SPAM® and potatoes. Cook, stirring occasionally, until potatoes are lightly browned. Stir in apple and syrup. Spoon 1/2 cup SPAM™ mixture into each squash half. Cover. Bake 40 to 50 minutes or until squash is tender.
