Ingredients
3 tablespoons refrigerated prepared pesto
2 tablespoons apple jelly
1 tablespoon balsamic vinegar
1/4 teaspoon ground black pepper
1 turkey tenderloin (about 3/4 pound)
1 box UNCLE BEN'S® Long Grain & Wild Rice Original Recipe
   
1. Combine pesto, apple jelly, vinegar and pepper in small bowl. Place turkey in large resealable plastic food storage bag. Add pesto mixture; seal bag. Refrigerate several hours.
2. Remove turkey from marinade, reserving marinade. Place turkey on grill over medium coals; brush with marinade. Grill 25 to 30 minutes or until turkey is no longer pink in center and juices run clear, turning over after 15 minutes and brushing with additional marinade. Do not brush turkey with marinade during last 5 minutes of grilling.
3. Meanwhile, prepare rice according to package directions; serve with turkey.
 
Cook's Tip   Turkey can be prepared in the oven instead of on the grill, if desired. Place turkey breast in greased shallow baking pan; brush with marinade. Bake, covered, in preheated 350°F for 30 minutes. Brush with additional marinade. Continue baking, uncovered, 15 minutes or until turkey is no longer pink in center and juices run clear. Serve with cooked rice.
