Ingredients

ripe avocados
|
|
1/4
|
cup lime juice
|
|
3
|
cloves garlic, crushed
|
|

tablespoons olive oil
|
|
1/2
|
teaspoon salt
|
|
1/4
|
teaspoon black pepper
|
|
1
|
cup (4 ounces) shredded Colby Jack cheese
|
|
1
|
cup diced and seeded plum tomatoes
|
|
1/3
|
cup sliced pitted black olives
|
|
1/3
|
cup salsa
|
|
1
|
tablespoon minced fresh cilantro
|
|
|
Tortilla chips
|

|
1. Cut avocados in half; remove pits. Scoop out flesh into food processor. Add lime juice, garlic, olive oil, salt and pepper. Cover; process until almost smooth.

2. Spread avocado mixture evenly onto large dinner plate or serving platter, leaving border around edge. Top with cheese, tomatoes, olives, salsa and cilantro. Serve with tortilla chips.
