Mediterranean Pork with Olives

Ingredients

tablespoon olive oil
|
|

|
bone-in or boneless pork chops, 3/4 inch thick
|
|
1
|
large onion, sliced
|
|
2
|
cloves garlic, finely chopped
|
|
1/4
|
cup dry white wine
|
|
1
|
jar (1 pound 10 ounces) RAGÚ® Old World Style® Pasta Sauce
|
|
1/2
|
cup sliced pitted ripe olives
|
|
|
Pinch ground cinnamon (optional)
|
|
|
|
|
|
|
|
|
|
1. In 12-inch skillet, heat olive oil over medium-high heat and brown chops. Remove and set aside.
|
|
2. In same skillet, cook onion and garlic over medium heat, stirring occasionally, until onion is tender. Add wine and bring to a boil over high heat, scraping brown bits from bottom of skillet. Return pork to skillet and stir in remaining ingredients. Simmer covered, stirring sauce occasionally, 20 minutes or until pork is tender. Serve, if desired, over hot cooked rice and garnish with fresh rosemary and additional olives.

Recipe Tip
There are literally hundreds of varieties of olives. Experiment with different ones, including kalamata and nicoise. You'll be pleasantly surprised by the flavor differences.
