French Beef Stew


Ingredients
1-1/2 pounds stew beef, cut into 1-inch cubes
1/4 cup all-purpose flour
2 tablespoons vegetable oil
2 cans (14-1/2 ounces each) DEL MONTE® Diced Tomatoes with Garlic & Onion
1 can (14 ounces) beef broth
4 medium carrots, peeled and cut into 1-inch chunks
2 medium potatoes, peeled and cut into 1-inch chunks
3/4 teaspoon dried thyme, crushed
2 tablespoons Dijon mustard (optional)
   
Prep Time 10 minutes
Cook Time 1 hour
1. Combine meat and flour in large plastic food storage bag; toss to coat evenly.
2. Brown meat in hot oil in 6-quart saucepan. Season with salt and pepper, if desired.
3. Add all remaining ingredients except mustard. Bring to a boil; reduce heat to medium-low. Cover; simmer 1 hour or until beef is tender.
4. Blend in mustard. Garnish and serve with warm crusty French bread, if desired.
