Chicken and Fruit Kabobs


Ingredients
1-3/4 cups honey
3/4 cup fresh lemon juice
1/2 cup Dijon mustard
1/3 cup chopped fresh ginger
4 pounds boneless skinless chicken breasts, cut into 1-inch pieces
6 fresh plums, pitted and quartered
3 firm bananas, cut into chunks
4 cups fresh pineapple chunks (about half of medium pineapple)
   
1. Prepare grill for direct cooking. Combine honey, lemon juice, mustard and ginger in small bowl; mix well. Thread chicken and fruit onto skewers, alternating chicken with fruit; brush generously with honey mixture.
2. Place kabobs on grill about 4 inches from heat. Grill 5 minutes on each side, brushing frequently with honey mixture. Grill 10 minutes more or until chicken is cooked through, turning and brushing frequently with remaining honey mixture.
