SPAM™ Broccoli Pecan Salad

Ingredients

(12-ounce) can SPAM® Classic, cut into strips
|
|
3/4
|
pound broccoli, broken into florets, blanched
|
|
1/4
|
pound Cheddar cheese, cut into matchstick-size pieces
|
|
1/2
|
cup thinly sliced radishes
|
|
1/4
|
cup white wine vinegar
|
|
3
|
tablespoons CARAPELLI® Extra Virgin Olive Oil
|
|

tablespoons sugar
|
|
1
|
clove garlic, minced
|
|
1/2
|
teaspoon dry mustard
|
|
1/4
|
cup toasted pecans
|
|

|
In large skillet over medium heat, sauté SPAM® until lightly browned. In large bowl, combine SPAM®, broccoli, cheese and radishes. In small bowl, combine vinegar, oil, sugar, garlic and dry mustard. Toss dressing with SPAM™ mixture. Cover and refrigerate 1 hour. Before serving, stir in toasted pecans.
