Grilled Fish, Vegetable & Rice Packets

box UNCLE BEN'S® Long Grain & Wild Rice Original Recipe

|
orange roughy or tilapia fish fillets (4 ounces each)
|
|
3
|
tablespoons olive oil
|
|
3
|
tablespoons balsamic vinegar or fresh lemon juice
|
|
1
|
medium red bell pepper, cut into thin 2-inch strips
|
|
1
|
cup thinly sliced zucchini
|
|
1/2
|
cup thinly sliced red onion
|
|

button mushrooms, quartered
|
|

|
1. Prepare rice according to package directions. Divide cooked rice evenly between four 15×12-inch pieces of heavy-duty foil; spread out rice slightly in center of foil. Place 1 fish fillet over each portion of rice; season fish with salt and pepper, if desired.
|

2. In medium bowl, gradually whisk oil into vinegar until combined. Add vegetables; toss gently until coated. Divide vegetables evenly over fish and rice; drizzle any remaining oil mixture over fish.
|
|
3. Seal foil packets by bringing the two long sides together above food and folding down in several tight folds, then tightly fold in the short ends.
|
|
4. Place foil packets, seam side up, on grid over medium coals. Grill, covered, 15 to 20 minutes or until fish flakes easily when tested with fork.

Cook's Tip
Packets can be placed on a baking sheet and baked in a preheated 400°F oven for 20 to 25 minutes or until the fish flakes easily when tested with fork.
