Tortellini with Three-Cheese Tuna Sauce

Tortellini with Three-Cheese Tuna Sauce

Ingredients

pound uncooked spinach or egg, cheese-filled tortellini
|
|
2
|
green onions, thinly sliced
|
|
1
|
clove garlic, minced
|
|
1
|
tablespoon butter or margarine
|
|
1
|
cup low-fat ricotta cheese
|
|
1/2
|
cup low-fat milk
|
|
1

(7-ounce) STARKIST Flavor Fresh Pouch® Tuna (Albacore or Chunk Light)
|
|
1/2
|
cup (2 ounces) shredded low-fat mozzarella cheese
|
|
1/4
|
cup grated Parmesan or Romano cheese
|
|
2
|
tablespoons chopped fresh basil or 2 teaspoons dried basil leaves, crushed
|
|
1
|
teaspoon grated lemon peel
|
|
|
Fresh tomato wedges, red peppers and basil leaves for garnish (optional)
|
|

|
|
In large saucepan, cook tortellini in boiling salted water according to package directions. When tortellini are almost done, in separate large saucepan, cook and stir onions and garlic in butter 2 minutes. Whisk in ricotta cheese and milk. Add tuna, cheeses, basil and lemon peel. Cook over medium-low heat until mixture is heated through and cheeses are melted.

Drain pasta; add to sauce. Toss well to coat; garnish if desired. Serve immediately.
