Coconutty "M&M's"® Brownies

The caramely coconut topping makes these brownies extra-special.

Ingredients

squares (1 ounce each) semi-sweet chocolate

cup granulated sugar

1/2
|
cup (1 stick) butter
|
|

large eggs

tablespoon vegetable oil
|
|

teaspoon vanilla extract

cups all-purpose flour
|

tablespoons unsweetened cocoa powder

teaspoon baking powder

teaspoon salt

cups "M&M's"® Chocolate Mini Baking Bits, divided
|

Coconut Topping (recipe follows)
|
|

|
Preheat oven to 350°F. Lightly grease 8×8×2-inch baking pan; set aside. In small saucepan combine chocolate, sugar and butter over low heat; stir constantly until chocolate is melted. Remove from heat; let cool slightly. In large bowl beat eggs, oil and vanilla; stir in chocolate mixture until well blended. In medium bowl combine flour, cocoa powder, baking powder and salt; add to chocolate mixture. Stir in 1 cup "M&M's"® Chocolate Mini Baking Bits. Spread batter evenly in prepared pan. Bake 35 to 40 minutes or until toothpick inserted in center comes out clean. Cool completely on wire rack. Prepare Coconut Topping. Spread over brownies; sprinkle with remaining 1/2 cup "M&M's"® Chocolate Mini Baking Bits. Cut into bars. Store in tightly covered container.

Ingredients

|

cup firmly packed light brown sugar
|
|
1/3
|
cup light corn syrup
|
|
1
|
cup sweetened shredded coconut, toasted*
|
|
3/4
|
cup chopped pecans
|
|
1
|
teaspoon vanilla extract
|
|
*To toast coconut, spread evenly on cookie sheet. Toast in preheated 350°F oven 7 to 8 minutes or until golden brown, stirring occasionally.

|
|
|
|
In large saucepan melt butter over medium heat; add brown sugar and corn syrup, stirring constantly until thick and bubbly. Remove from heat and stir in remaining ingredients.
