Grilled Vegetable Sandwiches

Ingredients

|
pounds assorted fresh vegetables*
|
|
1
|
envelope LIPTON® RECIPE SECRETS® Onion Soup Mix**
|
|
1/3
|
cup BERTOLLI® Olive Oil
|
|
2
|
tablespoons balsamic or red wine vinegar
|
|
1/2
|
teaspoon dried basil leaves, crushed
|
|
4
|
(8-inch) pita breads, warmed
|
|
4
|
ounces crumbled Montrachet, shredded mozzarella, Jarlsberg, Monterey Jack or Cheddar cheese
|
|
*Use any combination of the following, sliced: red, green or yellow bell peppers; mushrooms; zucchini or eggplant.

1. In large bowl, combine vegetables and soup mix blended with oil, vinegar and basil until evenly coated.
|
|
2. Grill or broil vegetables until tender. To serve, cut 1-inch strip off each pita. Fill with vegetables and sprinkle with cheese. Garnish, if desired, with shredded lettuce and sliced tomato.
