Makes 8 to 10 servings
Ingredients
12 boneless, skinless chicken tenderloins, cut into 1-inch pieces
4 cups water
2 boxes UNCLE BEN'S® COUNTRY INN® Chicken Flavored Rice
1 bag (1 pound) frozen peas, potatoes and carrots
1 can (10-3/4 ounces) condensed cream of chicken soup
1 container (12 ounces) refrigerated buttermilk biscuits
   
1. Heat oven to 400°F. In large saucepan, combine chicken, water, rice, contents of seasoning packets, vegetable mixture and soup; mix well. Bring to a boil. Cover; reduce heat and simmer 10 minutes.
2. Place in 13×9-inch baking pan; top with biscuits.
3. Bake 10 to 12 minutes or until biscuits are golden brown.
 
Cook's Tip   For individual pot pies, place rice mixture in small ramekins or casseroles. Proceed with recipe as directed.
