Makes 4 servings
Ingredients
1 tablespoon oil
4 boneless, skinless chicken breasts (about 1 pound)
3 cloves garlic, minced
1-1/2 cups UNCLE BEN'S® ORIGINAL CONVERTED® Brand Rice
2 cans (14-1/2 ounces) low-sodium chicken broth
1 cup grated Parmesan cheese
1 cup frozen peas, thawed
   
1. Heat oil in medium skillet. Add chicken, cook over medium-high heat 5 to 7 minutes or until lightly browned on both sides. Season with salt and pepper, if desired.
2. Add garlic; cook briefly. Stir in rice and chicken broth. Bring to boil. Cover; reduce heat and simmer 20 minutes or until chicken is no longer pink in center.
3. Remove from heat; stir in Parmesan cheese and peas. Cover and let stand 5 minutes.
 
Cook's Tip   For extra creaminess, stir in 2 tablespoons butter and/or 2 tablespoons cream with the Parmesan cheese; proceed with recipe as directed.
