1. Place melon on cutting board. Cut off ends with chef's knife; discard. Cut melon crosswise into 1-inch-thick slices.

2. Cut each melon slice into thirds with paring knife.

3. Remove seeds with spoon; discard seeds.
|
|
4. Remove peel from melon pieces with paring knife; discard peel.

5. For each fan, place one melon piece on cutting board with small curved edge facing you. About 1/2 inch from one end of melon piece, make a straight downward cut, being careful to cut only about two-thirds of way into melon piece.

6. Make additional straight cuts at 1-inch intervals until about 1/2 inch from other end of melon piece.

7. Position knife at first straight cut; make a slanting cut from there to bottom of second straight cut.
|
|
8. Remove small wedge resulting from this cut; set aside for snacking or another use. Repeat with remaining straight cuts.
