Chocolate Cinnamon Cake
Makes 10 to 12 servings
Ingredients
1/2 cup (1 stick) butter, softened
1-1/2 cups sugar
2 eggs
1 teaspoon vanilla
3/4 cup semisweet chocolate chips, melted and cooled
1-3/4 cups all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons baking soda
1/4 teaspoon salt
3/4 cup buttermilk
1/2 cup vegetable oil
  Chocolate Glaze (recipe follows)
   
1. Preheat oven to 350°F. Grease and flour 10-cup bundt pan. Beat butter and sugar 3 minutes in large bowl with electric mixer at medium speed until light and fluffy. Beat in egg and vanilla until blended. Stir in chocolate.
2. Combine flour, cinnamon, baking soda and salt in medium bowl. Add flour mixture to butter mixture alternately with buttermilk and oil, beginning and ending with flour mixture. Beat well after each addition. Pour batter into prepared pan.
3. Bake 45 to 55 minutes or until cake begins to pull away from side of pan. Cool in pan 10 minutes. Remove from pan to wire rack; cool completely.
4. Prepare Chocolate Glaze; drizzle over cooled cake.
 
Chocolate Glaze   Combine 1/2 cup semisweet chocolate chips and 1 teaspoon vegetable shortening in glass measuring cup. Microwave on HIGH 1 minute; stir. Continue heating at 15 second intervals, stirring, until melted and smooth.
