Rice Pudding

Rice Pudding


Ingredients
1-1/4 cups water, divided
1/2 cup uncooked long-grain rice
2 cups evaporated skim milk
1/2 cup granulated sugar
1/2 cup raisins
1/2 cup MOTT'S® Natural Apple Sauce
3 tablespoons cornstarch
1 teaspoon vanilla extract
  Brown sugar or nutmeg (optional)
  Fresh raspberries (optional)
  Orange peel strips (optional)
   
1. In medium saucepan, bring 1 cup water to a boil. Add rice. Reduce heat to low and simmer, covered, 20 minutes or until rice is tender and water is absorbed.
2. Add milk, granulated sugar, raisins and apple sauce. Bring to a boil. Reduce heat to low and simmer for 3 minutes, stirring occasionally.
3. Combine cornstarch and remaining 1/4 cup water in small bowl. Stir into rice mixture. Simmer about 20 minutes or until mixture thickens, stirring occasionally. Remove from heat; stir in vanilla. Cool 15 to 20 minutes before serving. Sprinkle each serving with brown sugar or nutmeg and garnish with raspberries and orange peel, if desired. Refrigerate leftovers.
