Fiesta-Style Roasted Vegetables

Fiesta-Style Roasted Vegetables


Ingredients
1 can (4 ounces) ORTEGA® Diced Green Chiles
3 tablespoons vinegar
2 tablespoons vegetable oil
1 package (1.25 ounces) ORTEGA® Taco Seasoning Mix
1 small red bell pepper, cut into strips
1 medium zucchini, cut into 1/2-inch slices
1 small sweet potato, peeled, halved and cut into 1/8-inch slices
1 small red onion, cut into wedges
  Nonstick cooking spray
   
COMBINE chiles, vinegar, oil and seasoning mix in large bowl; mix well. Add red pepper, zucchini, sweet potato and onion; toss gently to coat. Let stand at room temperature 15 minutes to marinate.
PREHEAT oven to 450°F. Cover 15×10-inch baking pan with foil and spray with cooking spray.
REMOVE vegetables from marinade with spoon; place on prepared pan.
BAKE 20 to 25 minutes until tender and browned, stirring once.
 
Tip   Substitute yellow squash for the zucchini, if preferred.
