Fiesta Bread


Ingredients
1/2 pound chorizo sausage, casings removed
1/2 cup chopped onion
1-1/4 cups all-purpose flour
1 cup cornmeal
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cumin
1 cup Mexican beer
1 cup shredded Cheddar cheese
1 can (4 ounces) diced green chilies
1 egg, beaten
   
1. Preheat oven to 375°F. In medium skillet, cook sausage and onion over medium-high heat until meat is no longer pink; drain. In large bowl, combine flour, cornmeal, baking soda, salt and cumin. In another bowl, combine beer, cheddar cheese, chilies and egg. Stir into flour mixture until combined. Stir in sausage mixture.
2. Spread into greased 8-inch square baking pan. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pan before slicing. Serve warm. Refrigerate any remaining bread.
