Mashed Sweet Potatoes with Pineapple and Brown Sugar
Makes 6 servings
Ingredients
2-1/2 pounds (3 medium) sweet potatoes
1 egg
1 tablespoon butter, softened
1/3 cup orange juice
  Salt and black pepper
1/4 cup packed brown sugar
5 pineapple slices (or as many as needed to cover the top)
   
1. Pierce potatoes all over with fork. Microwave potatoes at HIGH 10 minutes or until soft. Refrigerate until cool to the touch.
2. Preheat oven to 350°F. Peel sweet potatoes. Place potatoes in large bowl; mash. Add egg, butter, orange juice, salt and pepper; stir until well blended.
3. Place potato mixture in 1-quart casserole. Arrange pineapple slices on top; sprinkle with brown sugar. Bake, covered, 25 minutes. Remove cover; bake 15 minutes or until sugar is caramelized. Serve immediately.
