Moroccan Couscous
Makes 6 servings
Ingredients
1 cup low-sodium chicken broth
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2/3 cup uncooked couscous
2/3 cup DOLE® Pitted Dates or Pitted Prunes, chopped
1/2 cup chopped green onions
1/3 cup DOLE® Golden or Seedless Raisins
3 tablespoons sliced almonds, toasted
   
Prep Time 5 minutes
Cook Time 10 minutes
Combine broth, cinnamon and nutmeg in medium saucepan. Bring to boil.
Stir in couscous, dates, green onions and raisins. Remove from heat; cover. Let stand 5 minutes.
Stir couscous mixture with fork; spoon into serving dish. Sprinkle with almonds.
