Asparagus Casserole Bake
Makes 6 servings
Ingredients
1 pound fresh California asparagus, cut into 2-inch pieces
1-1/2 cups water
1-1/2 cups chicken broth
1 cup uncooked long-grain rice
1 small onion, thinly sliced
1/2 cup diced red bell pepper
1/2 cup grated Parmesan cheese
2 tablespoons butter
3 cloves garlic, minced
1 teaspoon salt
   
Combine all ingredients in 2-quart casserole and cover. Bake in 400°F oven 20 minutes. Stir; bake 20 minutes.
