Cool Summer Gazpacho Salad


Ingredients
3 cups fresh DOLE® Tropical Gold® Pineapple, cut into chunks
2 cups chopped tomatoes, drained
1 large cucumber, halved lengthwise and thinly sliced
1/4 cup chopped green onions
1/4 cup red wine vinegar
4 teaspoons olive or vegetable oil
1/2 teaspoon dried basil leaves, crushed
   
Prep Time 20 minutes
Chill Time 1 hour
Stir together pineapple and remaining ingredients in large bowl. Cover; chill 1 hour or overnight to blend flavors. Stir before serving.
