Garlic Mashed Potatoes
Makes 4 servings
Ingredients
1-1/2 pounds DOLE® Russet or White Potatoes, peeled, cut into 1/2-inch cubes
5 large cloves garlic, peeled
1-1/2 teaspoons salt, divided
1/2 cup buttermilk
2 teaspoons butter or margarine
1/4 teaspoon black pepper
   
Prep Time 15 minutes
Cook Time 15 minutes
Cover potatoes, garlic and 1 teaspoon salt with water in large saucepan. Heat to boiling; reduce heat to low and continue cooking 10 to 15 minutes or until potatoes are very tender. Drain.
Combine potato mixture, buttermilk, butter, remaining 1/2 teaspoon salt and pepper in large mixer bowl. Beat until smooth.
 
Blue Cheese Mashed Potatoes   Omit garlic cloves. In step 2, add 1/4 cup crumbled blue cheese with buttermilk to potato mixture.
