Sesame Crunch Banana Muffins


Ingredients
  Sesame Crunch Topping (recipe follows)
2 ripe medium bananas, mashed
1 cup low-fat milk
2 egg whites
2 tablespoons vegetable oil
1 teaspoon vanilla extract
1-1/2 cups uncooked rolled oats
1/2 cup all-purpose flour
1/2 cup whole wheat flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
   
1. Prepare Sesame Crunch Topping; set aside. Spray muffin cups with nonstick cooking spray or use paper liners.
2. Preheat oven to 400°F.
3. Combine bananas, milk, egg whites, oil and vanilla in large bowl. Combine oats, flours, sugar, baking powder and salt in medium bowl; stir into banana mixture until just moistened. (Batter will be lumpy.) Fill prepared muffin cups about 3/4 full. Sprinkle 2 teaspoons Sesame Crunch Topping over batter in each cup.
4. Bake 20 to 25 minutes until golden on top and wooden toothpick inserted into centers comes out clean. Cool slightly in pan before transferring to wire rack. Serve warm.
Sesame Crunch Topping
Makes about 3/4 cup topping
 
Ingredients
4 tablespoons packed brown sugar
2 tablespoons chopped walnuts
2 tablespoons whole wheat flour
1 tablespoon sesame seeds
1 tablespoon margarine
3/4 teaspoon ground nutmeg
1/4 teaspoon ground cinnamon
   
Combine all ingredients; mix well.
