Mozzarella-Pepper Sausage Skillet

Mozzarella-Pepper Sausage Skillet

Mozzarella-Pepper Sausage Skillet


Ingredients
1 pound mild Italian sausage, casings removed
1 tablespoon olive oil
6 ounces sliced mushrooms
1 medium zucchini, thinly sliced
3/4 cup finely chopped onion
1 tablespoon dried basil
1 can (8 ounces) tomato sauce
1/2 cup plain bread crumbs
1/4 teaspoon salt
1 medium red bell pepper, cored, seeded and cut into strips
1 medium green bell pepper, cored, seeded and cut into strips
6 ounces shredded mozzarella
   
1. Heat large nonstick skillet over medium-high heat until hot. Add sausage; cook until browned, stirring frequently to break up meat. Remove sausage with slotted spoon; drain on paper towels.
2. Add oil to skillet. Add mushrooms, zucchini, onion and basil; cook 5 minutes or until zucchini is soft, stirring frequently.
3. Return sausage to skillet. Add tomato sauce, bread crumbs and salt; mix well. Top mixture with bell pepper strips. Cover; simmer 25 minutes or until peppers are tender. Remove from heat. Top with cheese. Cover and let stand 15 to 20 minutes or until cheese is melted.
