Mediterranean Stuffed Turkey Burger
Makes 4 servings
Ingredients
1 pound ground turkey
1/4 cup uncooked quick oats
1 egg, beaten
1/2 teaspoon salt
1/4 teaspoon dried mint leaves, crumbled
1/4 teaspoon garlic powder
1/8 teaspoon ground cinnamon
1/2 cup low-fat cottage cheese, drained
1/4 cup crumbled feta cheese
2 tablespoons sliced pitted black olives
1/2 teaspoon dried oregano leaves
  Chopped cucumber, chopped tomato and sliced onion (optional)
   
1. Remove grill rack from grill and set aside. Preheat grill for direct-heat cooking method according to manufacturer's directions.
2. In medium bowl combine turkey, oats, egg, salt, mint, garlic powder and cinnamon. Divide turkey mixture in half. On 2 pieces (each 10×11 inches) wax paper, shape each half of turkey mixture into a patty, 6 inches in diameter.
3. In small bowl combine cottage cheese, feta cheese, olives and oregano. Spoon cheese mixture over one circle of turkey mixture, leaving 1/2-inch border around outside edge. Carefully invert remaining circle turkey mixture over cheese mixture. Remove top layer wax paper from turkey mixture. Press edges together to seal.
4. Lightly grease cold grill rack and position over hot coals. Invert giant turkey burger onto grill rack; remove wax paper. Grill burger 8 minutes per side or until internal temperature of 165°F is reached on meat thermometer. To turn giant burger, slide flat cookie sheet under burger and invert onto another flat cookie sheet, then carefully slide burger back onto grill rack.*
5. To serve, cut burger into fourths. Serve with cucumber, tomato and onion, if desired.
*Can also use a greased wire grill basket, if desired.
