Italian BLT Chicken Strata

(16-ounce) packages PERDUE® Fit 'N Easy® Skinless & Boneless Chicken Breasts

ounces focaccia bread, cut into 1/2-inch-thick slices
|
|

large tomatoes, cored and sliced
|
|
8
|
eggs or 2 cups egg substitute
|
|
1-1/2

cups heavy cream, light cream or milk
|
|

teaspoon salt
|
|
|
Pepper, to taste
|

cups grated Cheddar cheese
|

Preheat oven to 350°F.
|
|
In a large skillet, cook bacon over medium heat. Drain on paper towels. Keeping a little bacon fat in pan, add chicken and cook until cooked through. Set aside.

Cover bottom of 13×9-inch baking dish with focaccia slices. Cover bread with tomato slices, then bacon. Cut chicken into thin slices and arrange over bacon. Top with remaining focaccia slices.

In large bowl, whisk together eggs, cream, salt and pepper. Pour mixture over strata and sprinkle top with cheese.
|
|
Bake 35 to 45 minutes or until cheese has melted and strata feels firm to the touch. Cut into 8 squares and serve hot.
