Broccoli-Walnut Noodles
Makes 4 servings
Broccoli-Walnut Noodles

Broccoli-Walnut Noodles


Ingredients
12 ounces extra-wide curly "no yolk" noodles
2 pounds broccoli (florets and peeled stems), cut into 1/2-inch slices
2 tablespoons olive oil
1/2 cup chopped California walnuts
  Grated peel of 1 lemon
  Juice of 1 lemon
  Juice of 1/2 orange
1/2 teaspoon ground pepper
   
Prep Time 10 minutes
1. Cook noodles until al dente (about 5 minutes).
2. Steam broccoli until tender (3 to 5 minutes).
3. Heat olive oil in large skillet over medium-high heat; add walnuts. Sauté about 1 minute.
4. Combine noodles and broccoli. Add walnut-oil mixture; toss well. Add citrus peel, juices and pepper; toss well.
 
Variation   Add 1/2 cup diced smoked turkey, low-fat chicken sausage or seasoned tofu.
 
Serving Suggestions   Sliced tomato salad and crusty bread.
