Yield: Makes 4 servings (2 halves each)
Ingredients:
Yogurt Sauce (recipe follows)

pound ground beef

2
tablespoons red wine

1
tablespoon chopped fresh oregano or 1 teaspoon dried oregano leaves

2
teaspoons ground cumin

1/2
teaspoon salt

Dash ground red pepper

Dash black pepper

4
rounds pita bread, halved and split

Lettuce

Chopped tomatoes



Preparation:

Prepare Yogurt Sauce.

Soak 4 bamboo skewers in water about 20 minutes. Combine ground beef, wine, oregano, cumin, salt, red pepper and black pepper in medium bowl; mix lightly. Divide mixture into eight equal portions; form each portion into an oval, each about 4 inches long. Cover; chill 30 minutes.

Preheat grill. Insert skewers lengthwise through centers of ovals, placing 2 on each skewer. Grill over medium heat, covered, 8 to 10 minutes (or, uncovered, 13 to 15 minutes) to medium doneness (160°F), turning once. Fill each pita bread half with equal amounts of lettuce, meat and chopped tomatoes. Serve with Yogurt Sauce.
