Creamy Artichoke and Spinach Casserole

Ingredients

cup finely chopped onion
|

1/2

cup (1 stick) butter
|
|

packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry

can (14 ounces) artichoke hearts, drained and quartered

cups plain yogurt
|
|

|
cup (2 ounces) grated Wisconsin Parmesan cheese
|
|

|
teaspoon salt
|

teaspoon black pepper
|

|
In medium skillet, sauté onion in butter until tender; add remaining ingredients. Mix together; spread in 1-1/2-quart casserole. Bake at 350°F 25 minutes.
