Curried Turkey

Curried Turkey


Ingredients
1 tablespoon vegetable oil
1 small onion, chopped
1 garlic clove, minced
1 tablespoon grated fresh gingerroot
1 tablespoon flour
1/2 cup chicken broth
1 can (14-1/2 ounces) diced tomatoes with chiles
1/2 to 1-1/2 teaspoons curry powder*
1/2 teaspoon salt
1/4 teaspoon black pepper
3 cups chopped cooked turkey
1 teaspoon lemon juice
2 cups hot cooked rice
*Curry powder is a blend of spices, and taste varies from brand to brand. Start with 1/2 teaspoon curry powder for a mildly flavored dish, then adjust to taste; 1-1/2 teaspoons will make a hot dish.
   
Heat oil in very large skillet over medium-high heat. Add onion, garlic and gingerroot. Cook and stir 5 minutes or until onion is translucent. Stir in flour. Add chicken broth and scrape up browned bits. Bring to a boil. Reduce heat; cook and stire 2 minutes or until thickened. Add diced tomatoes, curry, salt and pepper. Simmer 5 minutes. Add turkey; simmer 5 to 10 minutes longer. Stir in lemon juice. Serve over rice.
