Tuna Cream Cheese Omelets
Makes 2 omelets
These omelets make cooking for 1 or 2 a snap.
 
Ingredients
1 teaspoon butter or margarine
4 to 6 large eggs
  Water
2 ounces cream cheese with chives, cut into 1/2-inch cubes, divided
2 tablespoons drained and chopped roasted red peppers, divided
1 (3-ounce) STARKIST Flavor Fresh Pouch® Tuna (Albacore or Chunk Light)
1 tablespoon light sour cream, divided
  Salt and pepper to taste
   
Prep Time 8 minutes
In small nonstick skillet, melt butter over medium-high heat. Beat 2 or 3 large eggs with 1 teaspoon water per egg. Stir in half of cream cheese and half of peppers. Pour into hot skillet; cook, using back of spatula to push cooked portion of eggs toward center, letting liquid flow underneath.
When eggs are cooked on bottom and top is nearly dry, sprinkle half the tuna over half the omelet. Fold omelet in half; slide onto plate. Top with half of sour cream; sprinkle with salt and pepper. Repeat for second omelet.
