Raisin Zucchini Muffins
Makes 12 muffins
Ingredients
3/4 cup nonfat milk
1/2 cup packed brown sugar
1/3 cup vegetable oil
1 egg
1-1/2 cups shredded zucchini
2 tablespoons grated orange peel
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon each: salt, cinnamon, ginger, nutmeg
1/8 teaspoon ground cloves
1 cup DOLE® Seedless Raisins
1/2 cup chopped almonds, toasted
   
Prep Time 20 minutes
Bake Time 25 minutes
Beat milk, brown sugar, oil and egg in large bowl. Stir in zucchini and orange peel.
Combine flour, baking powder, salt, spices, raisins and almonds in medium bowl. Stir into zucchini mixture just until moistened.
Spoon into 12 muffin cups sprayed with vegetable cooking spray. Bake at 375°F 25 minutes. Serve warm.
