1. Bake breadsticks according to package directions; cool.
2. Beat cream cheese with enough milk to make mixture spreadable. Stir in carrot and chives. Spread rounded tablespoon of cream cheese mixture over each ham slice. Roll ham slices around breadsticks. Wrap tightly in plastic wrap. Refrigerate until ready to serve or pack in lunchbox.
Note
Cream cheese spread can be made ahead and refrigerated for up to two days.
Tip
To keep breadsticks cool in the lunchbox, include a frozen juice box or frozen gel pack. Tell your kids to throw away leftovers.
Variation
Use the cream cheese spread as a dip for broccoli spears or celery sticks. For dipping consistency, thin the cream cheese with 1 to 2 additional tablespoons milk, then pack in small container with tight-fitting lid.
